Zucchini Boats
INGREDIENTS
3 zucchinis
8-10 grape tomatos
salt (optional-to taste)
pepper (optional-to taste)
garlic powder (optional-to taste)
1/2 pound cooked ground turkey (browned in a pan)
1/4-1/2 cup marinara sauce
1/2 cup shredded cheese
DIRECTIONS
Preheat the oven to 350 degrees
Cut the ends off of zucchini and then cut in half. Scoop out the center of each half of zucchini to make a boat shape. Spray the zucchini with olive oil spray and lightly season with salt, pepper, and garlic powder (optional)
Dice the tomatoes into bite sized pieces
Brown the ground turkey in a pan until fully cooked through. Add marinara sauce the the ground turkey and mix
Spoon the ground turkey/marinara mixture into each of the zucchini boats and top with the tomatoes
Line on a baking sheet and cook for 20 minutes or until the zucchini are tender
Add shredded cheese to each zucchini boat and put back into the over for 5 more minute until the cheese melts
Dice into bite sized pieces and enjoy!
