Homemade Mini Muffins
INGREDIENTS
1 cup whole wheat flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
2 eggs
1/3 cup maple syrup
1 cup apple sauce
1 tsp vanilla
1-1/2 cups fruit (I used a mix of wild blueberries and chopped strawberries- SO GOOD!)
DIRECTIONS
Preheat the oven to 350 degrees
Combine flour, baking powder, baking soda, salt, and cinnamon into a large mixing bowl. Mix all dry ingredients together. To the dry mixture add eggs, maple syrup, apple sauce, vanilla, and mix until combined. Fold in the fruit.
Spray a mini muffin tin (HERE) and spoon mixture into the pan (should be enough for 24 mini muffins)
Bake for 18 minute or until a toothpick comes out clean. Enjoy!
