Homemade Ramen
INGREDIENTS
2 chicken breasts
sprinkle of onion powder
sprinkle of garlic powder
salt and pepper
1 T of oil (I used sesame oil)
2 garlic cloves minced
1 cup broccoli florets
1/2 tsp ginger
1/4 tsp onion powder
6 cups chicken broth
Ramen noodles (I used 3 servings of lotus foods brand)
DIRECTIONS
Preheat oven to 400 degrees and cut chicken breasts into one inch strips. Spray a pan and lay chicken strips on the pan. Season with a sprinkle of onion powder, garlic powder, salt, and pepper. Bake for 20-22 minutes or until chicken is cooked through
Heat a pot of water to cook the ramen noodles
While chicken is cooking add oil to a pan and cook minced garlic for 2-3 minutes on medium heat. Add broccoli and season with 1/2 tsp ginger, 1/4 tsp of onion powder, and chicken broth. Bring to a boil and let simmer for 5-10 minutes
Once pot of water for the noodles is boiling cook ramen noodles according to package directions.
To serve for kids:
Slice noodles into smaller pieces and add diced chicken and broccoli topped with a small spoonful of broth
To serve for adults:
Add noodles to a bowl and top with broth, slices of chicken, 2 tsp soy sauce, salt, pepper roasted sesame seeds and any other toppings of choice (boiled egg, sriracha, green onions, etc.)
