Homemade Ramen

INGREDIENTS

  • 2 chicken breasts

  • sprinkle of onion powder

  • sprinkle of garlic powder

  • salt and pepper

  • 1 T of oil (I used sesame oil)

  • 2 garlic cloves minced

  • 1 cup broccoli florets

  • 1/2 tsp ginger

  • 1/4 tsp onion powder

  • 6 cups chicken broth

  • Ramen noodles (I used 3 servings of lotus foods brand)

DIRECTIONS

  • Preheat oven to 400 degrees and cut chicken breasts into one inch strips. Spray a pan and lay chicken strips on the pan. Season with a sprinkle of onion powder, garlic powder, salt, and pepper. Bake for 20-22 minutes or until chicken is cooked through

  • Heat a pot of water to cook the ramen noodles

  • While chicken is cooking add oil to a pan and cook minced garlic for 2-3 minutes on medium heat. Add broccoli and season with 1/2 tsp ginger, 1/4 tsp of onion powder, and chicken broth. Bring to a boil and let simmer for 5-10 minutes

  • Once pot of water for the noodles is boiling cook ramen noodles according to package directions.

    • To serve for kids:

      • Slice noodles into smaller pieces and add diced chicken and broccoli topped with a small spoonful of broth

    • To serve for adults:

      • Add noodles to a bowl and top with broth, slices of chicken, 2 tsp soy sauce, salt, pepper roasted sesame seeds and any other toppings of choice (boiled egg, sriracha, green onions, etc.)
