Birthday Smash Cake

INGREDIENTS

CAKE

  • 2 ripe bananas

  • 1 egg or flax egg (3 T water with 1 T flax meal stir and sit for 5 minutes to thicken)

  • 1/4 cup milk

  • 1/3 cup maple syrup

  • 1 cup whole wheat flour

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1/2 tsp cinnamon

  • 1/8 tsp salt

FROSTING

  • 4 oz softened to room temperature cream cheese

  • 2 T plain greek yogurt

  • 2 T maple syrup

  • A few drops of food coloring (optional)

  • Sprinkles

DIRECTIONS

CAKE

  • Preheat the oven to 350 degrees. Add all cake ingredients to a bowl (adding flour little by little) and mix to combine

  • Grease two 4 inch pans with oil (I used coconut oil) and a sprinkle of flour to prevent the batter from sticking.

  • Divide the batter evenly into the two pans and cook for 32-38 minutes until a toothpick comes out clean. Let cakes cool

  • Cut the tops off of the cake so both tops are flat

FROSTING

  • Mix together the cream cheese, yogurt, maple syrup, and food coloring until smooth and combined.

  • Frost the first cooled layer of smash cake. Add second layer on top and frost top and sides of cake. Optional: use cake decorating tool linked HERE and top with sprinkles or any other decorations of choice
