5 Ingredient Butternut Squash Mac N Cheese

INGREDIENTS

  • 1 butternut squash

  • Drizzle of olive oil

  • 2 cups pasta (I used Trader Joes Vegetable Radiatore)

  • 1 pat of butter (about 1 T)

  • 1 cup cheese (ideally freshly grated cheddar but any type works)

  • 1 cup milk (I used almond milk)

  • Seasonings of choice (I used salt, pepper, and garlic powder)

DIRECTIONS

  • Preheat oven to 400 degrees

  • Cut a butternut squash in half and scoop out the seeds. Drizzle each half with olive oil and put onto a baking pan face down. Bake for 35 minutes until cooked through

  • Meanwhile heat a pan of water to a boil and cook pasta according to package directions.

  • Once butternut squash is done cooking, scoop out the squash from the skin and add to a food processor. Add butter, cheese, milk, and seasonings. Blend until combined

  • Top the cooked pasta with sauce (you might have extra) and enjoy!
