Carrot Cake Muffins

INGREDIENTS

Carrot Cake Muffin

  • 1 cup whole wheat flour

  • 2 tsp baking powder

  • 1/8 tsp salt

  • 1 tsp cinnamon

  • 2 eggs

  • 1/2 cup maple syrup

  • 1 tsp vanilla

  • 1/4 cup melted coconut oil

  • 3/4 cup plain greek yogurt

  • 1 1/2 cups grated carrots

Optional Frosting

  • 4 oz softened cream cheese

  • 2 T plain greek yogurt

  • 2 T maple syrup

  • 1/2 tsp vanilla

DIRECTIONS

  • Preheat oven to 350 degrees

  • Add dry ingredients to a bowl (whole wheat flour, baking powder, salt, and cinnamon) and mix. Next add eggs, maple syrup, vanilla and melted coconut oil. Mix again until combined.

  • Fold in 3/4 cup of greek yogurt with a spatula into the combined dry and wet ingredients. Next fold in the grated carrots.

  • Spray down a muffin tin and add the mixture. Cook for 20 minutes or until a toothpick comes out clean.

  • While muffins are cooking make the optional frosting for the muffins. Combine all 4 ingredients (softened cream cheese, greek yogurt, maple syrup, and vanilla) into a bowl and use a hand mixture with whisk attachment and mixture until light and fluffy.

  • Wait until muffins and completely cooled before adding frosting. Store in an airtight container in a single layer in the refrigerator. Enjoy!
