Ricotta Stuffed Shells
INGREDIENTS
1 package pasta that you can stuff (I used paccheri)
15oz ricotta cheese (use the ricotta cheese container to measure out the mozzarella and parmesan)
1 empty ricotta container full of shredded mozzarella (apprx 4 oz)
1/2 empty ricotta container full of shredded parmesan cheese
2 eggs
1/2 tsp salt and pepper
1 tsp italian seasoning
1 lb ground beef or turkey
1 handful spinach (rip into small pieces)
1 jar pasta sauce
DIRECTIONS
Preheat oven to 350 degrees
Bring a large pot of water to a boil and cook noodles according to package directions
While pasta is cooking, make the cheese filling (once pasta is done, drain it and drizzle with olive oil to prevent sticking)
Add container or ricotta to a bowl and use empty ricotta container to measure out mozzarella and parmesan. Add to the bowl along with spices and eggs. Stir to combine and put in refrigerator while preparing next step
Brown meat in a pan until cooked through. Drain off excess fat if needed and then add pasta sauce to the pan. Heat through for 2-3 minutes at medium heat and add spinach at the end until it wilts down
Spread half of the sauce on the bottom of a pan. Stuff the noodles with the cheese mixture and layer on top of the sauce. Once the noodles fill the pan and the cheese mixture is used up, layer the rest of the sauce on top of the noodles
Sprinkle with a little extra mozzarella and cook for 40 minutes
