Cheesy Zucchini Potato Fritters

INGREDIENTS

  • 1 1/2 cups grated zucchini (strain excess liquid or press with a paper towel to remove excess moisture)

  • 1/4 cup grated onion

  • 2 heaping cups of hash browns

  • 1/2 cup whole wheat flour

  • 2 eggs

  • 1/2 cup of cheddar cheese

  • additional spices like garlic powder, paprika, etc (optional)

  • DIRECTIONS

  • Combine all ingredients into a bowl

  • Preheat a medium sized pan on medium heat. Add 1 TB oil to the pan (I used coconut oil) and let oil heat up

  • Add spoonfuls of the mixture to the pan and press down with a spatula

  • Cook for 2-3 minutes per side until golden brown and crispy

  • Let slightly cool then enjoy!
