Breakfast Pizzadilla
INGREDIENTS
1 egg
1 whole wheat tortilla
1/4- 1/2 avocado
small handful spinach (cut into thin strips)
small handful shredded cheese
DIRECTIONS
Scramble egg on a sprayed pan until cooked through
While the egg is cooking, cut spinach into thin strips
Spread a thin layer of mashed avocado onto a whole wheat tortilla
Layer scrambled egg, cheese, and spinach on half of the tortilla. Fold over and cook through on a sprayed skillet on medium heat until lightly browned on both sides
Cut, serve, and enjoy!
