Breakfast Pizzadilla

INGREDIENTS

  • 1 egg

  • 1 whole wheat tortilla

  • 1/4- 1/2 avocado

  • small handful spinach (cut into thin strips)

  • small handful shredded cheese

DIRECTIONS

  • Scramble egg on a sprayed pan until cooked through

  • While the egg is cooking, cut spinach into thin strips

  • Spread a thin layer of mashed avocado onto a whole wheat tortilla

  • Layer scrambled egg, cheese, and spinach on half of the tortilla. Fold over and cook through on a sprayed skillet on medium heat until lightly browned on both sides

  • Cut, serve, and enjoy!
