Banana Blondies with Cream Cheese Frosting

INGREDIENTS

BLONDIES

  • 1/4 cup melted butter

  • 1/4 cup applesauce

  • 1/2 cup coconut sugar

  • 1 egg

  • 1 tsp vanilla

  • 1/4 tsp salt

  • 1/2 cup mashed ripe banana (was about 1.5 bananas)

  • 1 cup whole wheat flour

FROSTING

  • 4 oz room temperature cream cheese

  • 2 T plain yogurt

  • 2 T maple syrup

  • 1/2 tsp vanilla

  • sprinkle of cinnamon (optional)

DIRECTIONS

  • Preheat the oven to 350 degrees

  • Add melted butter, applesauce, coconut sugar, egg, salt, mashed banana, and whole wheat flour to a large bowl and mix

  • Spray an 8x8 pan and add mixture to the pan and bake for 18-20 minutes

  • While baking make the frosting. Add cream cheese, yogurt, syrup, vanilla, and cinnamon to a bowl and blend until smooth. Keep in the refrigerator until the blondies cool

  • Cool the blondies before frosting them

  • Frost blondies and enjoy!
